What Is Cơm Tấm?.

Broken rice — grains fractured during milling — under a grilled pork chop, shredded pork skin and a steamed egg cake. Saigon's most common lunch plate.

Cơm tấm is a Vietnamese plate built on broken rice — grains that fractured during milling — served most often with a marinated grilled pork chop, a scattering of shredded pork skin, a steamed pork-and-egg cake, and a small dish of nước chấm to pour over everything.

It is a plate, not a bowl, and it is the everyday lunch of southern Vietnam in a way no noodle soup is.

What "broken rice" actually means

Milling rice cracks some of the grains. Broken grains were historically the fraction that could not be sold at full price, so they were eaten at home — cheap food, in other words, which is where the dish comes from.

But the texture is the reason it survived prosperity. Broken grains cook faster, absorb sauce more readily, and produce a slightly sandy, looser plate of rice that does not clump the way whole-grain jasmine does. It is a different mouthfeel, and it is the correct one under a fatty grilled chop with fish sauce poured over it. Cơm tấm made with whole rice tastes like a different dish, and a worse one.

What comes on the plate

  • Sườn nướng — a thin pork chop marinated in lemongrass, garlic, fish sauce, sugar and often condensed milk or honey, then grilled over charcoal until the sugars char. This is the centrepiece and the thing to judge.
  • — shredded pork and pork skin tossed with toasted rice powder. Chewy, faintly nutty, and the texture element.
  • Chả trứng — a steamed cake of ground pork, egg, glass noodles and wood ear mushroom, sliced into a wedge. Soft, savoury, a little like a dense frittata.
  • Trứng ốp la — a fried egg, usually with a runny yolk, if you order it.
  • Đồ chua — pickled carrot and daikon, plus sliced cucumber and tomato.
  • Mỡ hành — scallion oil, spooned over the rice.

Order all three of the main toppings and you have cơm tấm đặc biệt, which most menus abbreviate as "cơm tấm sườn bì chả".

The sauce is not optional

Nước chấm — fish sauce diluted with water, lime or vinegar, sugar, garlic and chilli — arrives on the side, and the dish does not work until you use it. Pour it over the rice, not just the meat. Southern versions are noticeably sweeter than northern ones, which is correct for this plate.

A kitchen's nước chấm tells you a great deal. Too sweet and it flattens everything; too raw and it is just salty. Balanced, it does what a vinaigrette does for a salad.

How to tell a good one

  • Char on the chop, not colour from a bottle. The marinade's sugar should have caramelised in visible dark patches over charcoal.
  • The chop is thin and pounded. A thick chop cooks unevenly and goes dry at the edge before the middle is done.
  • The rice is loose and fragrant, ideally still warm from a cooker rather than reheated.
  • Scallion oil on the rice. Its absence is a small thing that makes a large difference.

When it is eaten

In Vietnam, cơm tấm is a breakfast and lunch dish, sold from morning through early afternoon. In the United States it has drifted later, and most restaurants serve it all day. It travels better than a noodle soup, which is why it is a good takeaway order when pho is not.

Where it fits on a Vietnamese menu

If you have only eaten pho, cơm tấm is the most useful thing to order next, because it shows you the other half of Vietnamese cooking — grilled, sweet-savoury, plate-based rather than broth-based.
